Couple of additions to the list:
mail.com is probably the biggest source of obscure .com addresses - they let you pick from dozens of domains like engineer.com, consultant.com, techie.com, writeme.com, europe.com, etc., all free. GMX.com is still open too, and surprisingly aol.com sign-ups still go through if you start from their main page. For non-.com but still unusual: yandex.com, mailfence.com, and disroot.org.
